Domaine Ventenac - Chardonnais

The philosophy behind the wine:

The idea that we have of a Chardonnay born from our terroir is first and foremost minerality and focus, doubled with an aromatic complexity (exotic fruits, honey, slight toasted notes) and a balanced structure on the palate (lively, rich and velvety). To accomplish this, we have reduced our yield per vine, and seperated our "first juices" (80%) from the first "press juices" (20%) which we vinify respectively using "reductive" and "oxydative" methods. The blend of the two wine bases has allowed us to realize this precision wine, characterised by a nice balance between freshness and body.

Press: 0,8 bar - Seperation of juices
Vinification: 300 Hl stainless steel tanks - Processing of first juices under inert gas (nitrogen) at 5°C - Processing of press juices in an oxidative method - Cold clarification - Fermentation at 18°C - Racking - Ageing on find lees (2 months) - No malolactic fermentation - Bentonite fining - Tartaric stabilisation (0°C) - Filtration
