Domaine Ventenac - Syrah

The philosophy behind the wine:

The idea of vinifying a Syrah as a monovarietal came to us after many years of contemplation. We were aware of the aromatic potential of our Syrah planted in the high slopes, on layers of particularly rocky white limestone. But this was most often fully used in the crafting of our AOC wines. However, its peppery character with a strong concentration of violet, in a very "Northern" style, finally convinced us, even if it means losing the AOC status, to present this wine composed of 100% of this complex variety, which reveals the specificity of our terroir: sunshine, but no heat or jammy fruit on the palate. Just pleasure.


Grape Varieties: 100% Syrah
Vineyards: Upper parts of « Cantaoussel » and of « la grande Garenne »: Clay-stoney white limestone and calcareous soils - Density: 6500 vines / Ha
Harvest: Yields: 55 Hl / ha - Sorting - Fully crushed
Vinification: 300 Hl stainless steel tanks - Pre-fermentary cold maceration for 5 days at 6°C - Yeast addition - Fermentation at 28°C - Daily pump-overs - Vatting length : 30 days - Malolactic fermentation - Racking - Filtration
