Chateau Ventenac - Grande Réserve

The philosophy behind the wine:

The Grande Réserve is vinified in the same philosophy as the Réserve, but differs mainly by the ageing regiment (100% of the wine is aged in oak barrels: 1/3 one year-old, 1/3 two year-old and 1/3 three year-old) and the vatting length. The result is a structured wine with soft, round tannins, with more present toasted and vanilla notes which will continue to improve over time.

Vineyards: Calcareous soils and clay-limestone - « La Grande Garenne », «Le Four à Chaux», « Les Plots », « Calbet Bas » - Density: 6500 vines / Ha
Harvest: Yields: 50 hl / ha - Sorting - Fully crushed
Vinification: 300 Hl stainless steel tanks - Pre-fermentary cold maceration for 5 days at 6°C - Yeast addition - Fermentation at 28°C - Daily pump-overs - Vatting length : 45 days - Malolactic fermentation - Racking - Filtration
Ageing: 100% of the blend: 12 months in Seguin Moreau 225L - oak barrels - 12 months in cement tank
